This light and fluffy slice of cheesecake has a hint of fall inspired by my Pumpkin Spice Cream Cheese recipe. Quick and simple to make in under 10 minutes. You can further reduce the points by using fat free cream cheese if you wish, but I personally prefer using 1/3 fat cream cheese instead.

Pumpkin Spice No-Bake Cheesecake

Servings: 8 Size: 1/8th Calories: 239 Old Points: 5.25 pts • Points+: 6 pts
  • 7 oz 1/3 less fat Philadelphia Cream Cheese
  • 1/2 cup pureed pumpkin (canned is fine)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 cup brown sugar, unpacked
  • 8 oz Cool Whip Free, thawed
  • 9 inch reduced fat Graham Cracker Crust
In a large bowl using an electric mixer, whip cream cheese, pumpkin, vanilla, cinnamon, pumpkin pie spice, and brown sugar for a few minutes until fluffy. Add Cool Whip and whip until smooth. Spoon mixture into pie crust and chill for a few hours, until firm.

Beaver Mountain Chili

Ingredients:

  • 2-3 pounds ground beef
  • 1 large onion
  • 1 each red, green, yellow & orange pepper
  • 1 jalapeño (no seeds or vein)
  • 2 Large cans crushed tomatoes
  • 1 small cans of Italian diced tomatoes
  • 2 cans black beans
  • 2 cans great northern white beans
  • 2 cans dark red kidney beans
  • 1 can pinto beans
  • 1 can baked beans
  • 2-3 packages chili seasoning
  • ¼ cup ketchup or more to taste
  • ¼ cup brown sugar (optional)
  • Mrs. Dash
  • Garlic powder
  • Salt
  • Pepper

Directions

Add ground beef, chopped onions, all peppers and jalapeño to large Dutch oven or pot. Cook until beef is no longer pink. Drain all beans except black beans, and baked beans. Drain diced tomatoes. Add the ingredients to beef, pepper and onion mixture. Cook until all ingredients are cooked and tender. Season to taste with Mrs. Dash, garlic powder, salt and pepper.

Lasagna Soup

Brown; Stir In:
1 lb. ground Italian sausage
2 cups onion, chopped
1 cup carrots diced or shredded
2 cups mushrooms
2 T. garlic, minced
Add; Stir In:
4 cups chicken broth
1 can chopped Italian-style stewed tomatoes (14 1/2 oz.)
1 cup Bowtie Pasta
2 cups of fresh spinach
4 t thinly sliced fresh basil
Serve Soup Over; Garnish With:
1 cup fresh mozzarella cheese, diced

Brown sausage in a large saucepan over medium-high heat, add onion and carrot; saute 3 minutes or until veggies are semi soft. Stir in mushrooms and garlic, and saute another 3 minutes.
Add broth and tomatoes; bring to a boil. Stir in the pasta and simmer until cooked, about 10 minutes (or according to package directions.) Add the spinach and cook about 1 minute until wilted.
To serve place cubes of cheese in each serving bowl, then ladle over to melt. Garnish with parmesan and basil.
Makes about 8 cups

Blueberry Cream Muffins

Ingredients

  • 4 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sour cream
  • 2 cups blueberries

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper muffin liners.
  2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
  3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
  4. Bake in preheated oven for 20 minutes.

Ingredients
  • 1 package (1/4 ounce) active dry yeast
  • 1/3 cup plus 1 teaspoon sugar, divided
  • 1-1/2 cups warm water (110° to 115°), divided
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/4 cup instant nonfat dry milk powder
  • 1-1/4 teaspoons salt
  • 5-1/2 to 6 cups all-purpose flour

Directions

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in 1/2 cup water. Add the butter, eggs, milk powder, salt, 3 cups flour and remaining sugar and water. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.
  • Punch dough down. Divide into 27 pieces; shape into balls. Place 18 balls in a greased 13-in. x 9-in. baking pan and remaining balls in a greased 9-in. square baking pan. Cover and let rise until doubled, about 45 minutes.
  • Bake at 375° for 17-20 minutes or until golden brown. Cool on wire racks. Yield: 27 rolls.

Nutritional Analysis: One roll (prepared with margarine) equals 142 calories, 156 mg sodium. 16 mg cholesterol, 23 gm carbohydrate, 4 gm protein, 4 gm fat. 20 40 sdss

Ingredients
  • 1-1/2 pounds lean ground beef
  • 1 cup frozen chopped sweet green and red peppers
  • 1 can (15.5 ounces) black beans, drained and rinsed
  • 1 can (11 ounces) corn nibblets, drained
  • 1 jar (4.25 ounces) diced green chiles
  • 1 packet onion soup mix
  • 2-1/4 cups water
  • 1 tablespoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons all-purpose flour
Directions

1. Brown beef in 5- to 6-quart large, deep pot over medium-high heat, about 5 minutes, breaking up meat with wooden spoon but leaving some large pieces.

2. Add frozen chopped peppers, beans, corn, chiles, soup mix, 2 cups water, cumin, salt, oregano and cayenne. Simmer, covered, 10 minutes. Stir 1/4 cup water into flour in small cup until smooth. Stir into stew; cook until thickened, about 1 minute.

Homemade Chicken, Ranch And Rice Soup

Homemade Chicken, Ranch and Rice Soup

2 Tablespoons extra virgin olive oil

1 medium onion, finely chopped

2 large carrots, peeled and sliced

3 stalks of celery, chopped

3 Tablespoons fresh minced garlic

2 large boneless skinless chicken breasts

1 Cup dry rice, steamed….comes out to about 3 Cups cooked

64 oz chicken broth

1 Tablespoon dry Ranch Dressing seasoning

1/2 teaspoon kosher salt

1/4 teaspoon fresh cracked black pepper

2 Tablespoons Dijon Mustard

1 teaspoon hot sauce, like Tabasco (optional)

1. Heat oil into a large dutch oven over medium heat. When hot, saute onion, carrots and celery for 7-10 minutes or until softened slightly. Stir in garlic and cook for 1 minute. Stir in chicken breast and rice then pour in chicken broth. Stir, then season with ranch seasoning, salt, pepper and add in Dijon and hot sauce. Reduce heat to low and simmer until serving. Taste and season accordingly.

Turkey Cheese Ball

Here is a fun appetizer that I made for Thanksgiving last year. It was a HIT!

I used felt to create a turkey head. I used 2 pieces, sewed all the way around
with a small hole in the bottom, then slid a skewer in the bottom to attach the turkey to the ball. You could make a head out of cardstock as well and glue a toothpick or skewer in between the layers of cardstock).

Then I added crackers and pretzels in it for the feathers and loaded up the platter with more crackers.

This makes a lot!
But since it is made from cream cheese, it will store for a while in the refrigerator.

Easy Cheese Ball

3 packages of cream cheese
1 package of dry ranch mix
3 1/2 c. shredded cheese, whatever you like
1/3 c. diced green onions
2 c. almonds (toasted)
Mash cream cheese in a bowl. Add next 3 ingredients. Form into a ball shape and roll in nuts. Wrap in plastic and refrigerate for at least 8 hours (to allow ranch to distribute evenly...otherwise it'll be too salty).
Serve with crackers.

Make sure to let the cheese ball chill for the 8 hours, then add the crackers right before serving. Do not refrigerate the crackers and the assembled turkey for 8 hours. The crackers will get soft.

Thankful Rolls

Want a fun, new tradition to add to your Thanksgiving festivities?
How about making some "Thankful Rolls".
These are kind of like fortune
cookies...but for rolls...with personalized messages.
Then simply cut out the questions and fold them up as
small as you can. Wrap them in a rectangle of tinfoil.

Then take your favorite rolls...homemade or frozen dough.
I used frozen Rhodes dough for these to share with you
here, but for our Thanksgiving
dinner we always make my mom's yummy dinner roll recipe!

Then serve them up. Your guests will be surprised and
excited to find they have a fun little suprise awaiting them.
Just make sure no one eats a note
on accident :). I guarantee you will be able to
spark a fun discussion that will help you remember why you
are thankful for your friends and family.

You could also use this idea for someone's birthday or other
special occasion. Just change what is written on the little
notes to customize it for a certain event!

Pie On A Stick

Ingredients:

1 15-oz pkg refrigerated pie crust (2 crusts)

10-12 paper or wooden lollipop sticks

Your favorite pie filling (I cut the apples in mine to be just little then mashed with a fork a bit)

1 egg, separated

1 tablespoon sugar

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

Preparation:

  1. Preheat oven to 375°. If not using a nonstick cookie sheet line with parchment paper and set aside.
  2. Unroll the pie crusts on a lightly floured surface. Roll each crust to be about a 12 inch circle. Using a leaf cookie cutter or circle (mine was around 3 inches and I found it at Hobby Lobby) make 10 – 12 cutouts from each crust.
  3. Put half the cutouts on the baking sheet and press the lollipop sticks into the center of each. Spoon a little filling into the middle of each.
  4. Take your egg white and add a teaspoon of water, whisk until frothy. With your finger brush the egg white on the edges of the cutouts. Place the other cutouts onto the filling and with a fork seal the edges. Make sure the dough is pressed firmly around the stick.
  5. Whisk the egg yolk and a teaspoon of water in a small bowl. Brush onto the top of the pies. Combine the sugar, cinnamon, and nutmeg. Sprinkle over the top of the pies.
  6. Bake for 15 -20 minutes or until golden. Let cool on baking sheet.

Recipe for Muffin Tin Pumpkin Pies:

  • pumpkin pie filling for one 9-inch pie- use recipe from the back of the pumpkin can
  • 2 9-inch pie crust doughs – pre-made from a box
  • bowl or round cookie cutter 4 inches in diameter
  • muffin tin
  • whipped cream

Makes 12 mini pumpkin pies

1. Prep your dough. Using a bowl or 4 inch round cookie cutter, cut out 12 circles from your 2 9-inch pie crust doughs.

2. Place each circle into a pre-greased muffin tin. Press them in, letting the sides come up for a fun look. Flute the bottom of your dough with a fork to keep the crust from bubbling up as it cooks.

3. Pour your filling into each muffin tin cup. Fill them to the very top. I like to use the recipe for filling from the pumpkin can. But there are a lot of great recipes out there where you can use fresh pumpkin to make your filling.

4. Bake your muffin tin pumpkin pies at 425* for 15 minutes. Then turn your heat down to 350* and bake them for 25-30 minutes. (This is 15-20 minutes less than a regular pie)

5. Let these cool on a wire rack for a couple of hours to let the pumpkin filling set.

6. Add a dollop of whipped cream to each individual muffin tin pie.

Ingredients
  • 24 frosted cupcakes
  • 24 Nutter Butter cookies
  • 2-3 tablespoons of white frosting or decorator's gel
  • Mini chocolate chips
  • Fruit leather, various flavors and colors
  • toothpicks
Instructions
  1. To make each turkey, press the lower portion of a Nutter Butter cookie into a frosted cupcake for the bird's head.

  2. Use tiny dabs of frosting to stick on mini-chocolate chip eyes and a red fruit leather wattle.

  3. For each turkey's tail, use a butter knife to cut out a dozen feather shapes (about 3 inches long and 1 inch wide) from fruit leather.

  4. Lay 6 of the feather shapes on a flat surface and place a wooden toothpick lengthwise atop each so that one end of the toothpick extends about an inch below the feather. Layer another fruit leather feather layer atop each of the 6 shapes, sandwiching the toothpicks between them.

  5. Press the 2 layers together to make them stick, then fringe the edges of the feather with a butter knife. Now your child can stick the colored feathers into the cupcake behind the cookie head.

Prep Time: 15 mins

Total Time: 45 mins

  1. Coat large saucepan with a few sprays of olive oil cooking spray. Add the onions and cook over medium-high heat until they're soft and just starting to brown. Add the ground turkey and cook over medium-high heat, breaking up the meat with a spoon, for about 6 minutes or until no longer pink. Add tomatoes, pinto and black beans, broth, garlic, chili powder, oregano, cumin and mustard powder. Bring to boil over high heat, then reduce the heat to low. Cover and simmer for 20-30 minutes. Garnish with olives and scallions.
** I left out the mustard powder, black olives and scallions.

Ingredients

  • 1-1/2 pounds lean ground beef (90% lean)
  • 1/2 cup chopped onion
  • 2 teaspoons all-purpose flour
  • 1 cup salsa
  • 1/2 cup chili sauce
  • 1 cup frozen corn
  • 1 can (4 ounces) chopped green chilies
  • 2 tablespoons brown sugar
  • 1 sheet refrigerated pie pastry
  • 1 egg
  • Orange paste food coloring

Directions

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a small bowl, combine the flour, salsa and chili sauce until blended; stir into skillet. Add the corn, chilies and brown sugar.
  • Transfer to a deep-dish 9-in. pie plate. Unroll pastry; place over filling. With a sharp knife, cut out a face to resemble a jack-o'-lantern; flute edges. Beat egg and food coloring; brush over pastry.
  • Bake at 450° for 9-11 minutes or until crust is golden brown and filling is bubbly. Yield: 6 servings.


Nutrition Facts: 1 serving equals 428 calories, 19 g fat (8 g saturated fat), 97 mg cholesterol, 764 mg sodium, 38 g carbohydrate, 1 g fiber, 25 g protein.

  • 1 (8 ounce) package cream cheese, softened
  • 2 cups powdered sugar
  • 1 cup canned pumpkin
  • 1/2 cup sour cream
  • 1 teaspoon ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground ginger
  • 1 cup frozen whipped cream, thawed
  • Gingersnap cookies, apples, or cinnamon graham cracker sticks

Directions

In a large bowl, beat cream cheese an and powdered sugar until smooth. Add pumpkin, sour cream, cinnamon, pumpkin pie spice, and ginger. Mix well. Fold in the thawed whipped cream. Serve with green apples, graham cracker sticks, or gingersnaps. Store in the refrigerator.

Ingredients
  • 2 (18.25 ounce) packages devil's food cake mix
  • 4 eggs
  • 1 cup shortening

Directions

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Blend the above ingredients together with a pastry blender until mixed.
  3. Roll in balls about the size of a quarter and place on ungreased baking sheets. Make an even number of balls.
  4. Bake for 10 minutes. Let cookies stand on cookie sheet for 5-6 minutes before removing them to cooling rack. After cookies have cooled, put Cream Cheese Frosting (see recipe or use one can of pre-made frosting) between two cookies, putting bottom sides together.
  5. NOTE: Adding chopped pecans to the cookies without making them into sandwiches is also very good. Spice cake mix can be used in place of Devil's food.

Use the Oreo Truffle recipe to make these cute little pumpkins.
Use white chocolate with orange food coloring to dip the balls into.
Then use stick pretzels for the stems.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 pkg. (1 lb. 2 oz.) OREO Cookies, finely crushed (about 4-1/4 cups), divided
2 pkg. (8 squares each) BAKER'S Semi-Sweet Chocolate, melted

MIX cream cheese and 3 cups cookie crumbs until well blended.

SHAPE into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs.

REFRIGERATE 1 hour or until firm.

2 ripe bananas cut into 1/4 inch slices

2 Tablespoons butter, cut into small pieces

2 Tablespoons brown sugar

1 roll Pillsbury French Bread Loaf

4 Tablespoons softened butter

1/2 Cup brown sugar

1 1/2 Tablespoons ground cinnamon

1 Cup powdered sugar

3-4 Tablespoons heavy cream

1. Preheat oven to 425 degrees F. Place banana slices and cut up pieces of butter into a small baking dish. Sprinkle with brown sugar and bake for 25 minutes or until golden and bubbly. Remove and let cool for 10 minutes. Next, use a fork to smash roasted bananas until well combined.

2. Reduce heat to 350 degrees F. Unroll Pillsbury French Bread dough into rectangle. Spread with softened butter and sprinkle with brown sugar and cinnamon. Place dollops of roasted banana mixture evenly over top. Starting from long end, roll up into log shape. Using a sharp knife, cut 1 inch slices and place onto a silpat or parchment lined baking sheet. Bake for 25-30 minutes or until just turning golden brown. Remove and let cool for 10 minutes.

3. Whisk powdered sugar and heavy cream until combined; drizzle over top of warm rolls.

Ingredients

  • 1 pound ground beef
  • 1 (14.5 ounce) can canned diced tomatoes
  • 1 (15 ounce) can kidney beans, drained
  • 1 (1.25 ounce) package chili seasoning mix

Directions

  1. Crumble the beef into a large skillet over medium-high heat. Cook and stir until evenly browned. Drain off grease, and mix in the tomatoes, kidney beans and chili seasoning mix. Reduce heat to medium, and simmer for 15 minutes. Top with cheese when served.
** Would be great with onion added.

1 Cup canned pumpkin

1/4 Cup granulated sugar

1/4 Cup heavy whipping cream

1 egg

1/2 teaspoon ground cinnamon

1/4 teaspoon fresh grated nutmeg

4 sheets (2 boxes) of puff pastry, thawed

3 Tablespoons melted butter

3 Tablespoons granulated sugar

1 1/2 Tablespoons ground cinnamon

Melted chocolate for drizzling (optional)

1. Preheat oven to 350 degrees F. In a large bowl mix the pumpkin, sugar, heavy cream, egg, cinnamon and nutmeg until creamy and well combined.

2. Place puff pastry onto a lightly floured countertop and cut out 4 pumpkins per sheet of pastry. Place pumpkin cut outs onto silpat or parchment lined baking sheets. Brush each pumpkin lightly with butter then sprinkle with sugar and cinnamon. Spoon about 2 Tablespoons of pumpkin pie filling around center of pumpkins leaving 1/4 inch border around edges.

3. Bake for 25-30 minutes or until puff pastry is golden brown on the edges and pumpkin pie is cooked through. Let cool for 10 minutes on baking sheet then transfer to cooling rack. Serve room temperature or chilled. Drizzle with melted chocolate if desired before serving.
